Note: The fried rice today was experimental, since it is Thursday and I am running out of my usual ingredients! I first cooked minced onion and garlic in heated oil then added finely diced carrots and zucchini. Cold cooked rice was added and stirred until separated. Here I added a bit of chicken stock for additional nutrient and flavor, then I added frozen peas. Normally I add eggs to my fried rice, but today I made scrambled eggs on the side. The flavor was different from my usual fried rice made with Taiwanese sausage, and the girls ate quite a bit of it!
