Dinner
Three mini tarts-
* Corn, chicken and parsley
* Chicken, tomato and cheddar cheese
* Apple, chicken, parsley and Parmesan cheese
Banana and strawberry yogurt
Grapes and apple
Sweet potato and ginger soup

Note: I used the leftover "experimental pizza dough" (actually a quiche dough from Cooks Illustrated) to try with different toppings today. I thought it might be fun for the girls to have "mini pizzas" for dinner. These little tarts were very tasty. (A great hor devour idea for future house parties!) Unfortunately the girls did not appreciate it. Besides that they were tired and cranky from skipping a nap, they had trouble keeping the toppings on the shells. Too fancy for (less than) 2 year olds!

Monday- February 21, 2011
Breakfast
Oatmeal with azuki bean puree
Hard boiled eggs
Banana and blueberries
Note: The girls don't usually like beans too much. Most of the time they would put beans in their mouth, spit them out and repeat with other beans. My suspicion is that they don't like the skin. Today I pureed the sweet azuki bean soup and mixed with oatmeal. Turned out they loved it and had nothing left for me!
Lunch
Toasted whole wheat toast
Black bean and tomato dip
Sweet peas with cheddar cheese
Strawberry and banana yogurt
Cantaloupe and strawberries

Dinner

Lunch
Crustless quiche with zucchini, spinach, sausage and cheese
Strawberry and blueberries
Snack
Sweet potato with ginger soup
Note: I made three "dessert soups" this weekend. One started at nearly 2am last night and one this morning. Yeah, I think I was manic. The three soups were: red bean soup with brown sugar, taro with tapioca and sweet potato soup with ginger and brown sugar. The girls didn't really care for steamed sweet potatoes before, so I was surprised they kept asking for more after trying the sweet potato soup I was having. Maybe they liked ginger?

Lunch
Buttermilk pancake with strawberries
Strawberries

Cantaloupe
Dinner
Pizza with tomato and Parmesan cheese
Sweet peas and corn with cheddar cheese

Note: I tried a new "pizza crust" for the girls today. The previous version works fine, but seems a bit chewy to me, so I set out for a flakier version. I chose the crust recipe for Quiche Lorraine from Cooks Illustrated and it came out really nice. Very flaky and very tasty. It didn't really go well with the tomato topping though, so maybe I will have to try something more creative. Fun!

Snack
Smoothie with banana, strawberry and dragon fruit

Note: This crazy looking dragon fruit turned out to be not very tasty. Unfortunately it was too expensive to be thrown away, so I mixed it with strawberry and banana for the girls.

Basically it is a steamed bun filled with stewed pork, peanut powder and cilantro. It turned out quite well today, and even the girls loved it!

Happy Chinese New Year! We celebrated the year of the Bunnies by making dumplings. Chive with eggs and rice noodle and pork and cabbage dumplings. Shown in the picture are the bite-size dumplings for the little people compared to the one normal size dumpling.
Breakfast
Oatmeal with banana and blueberries
Cantaloupe
Lunch
Star pasta with shrimp, tomato, sweet peas, shallot and Parmesan cheese
Pears
Note: The shrimp pasta was quite tasty, so we will record the recipe here for the future reference.
Fresh shrimps- shelled and deveined
Star pasta- cooked
Tomatoes- peeled, seeded and diced
Shallot- finely chopped
Frozen sweet peas
Chicken broth
1) First the shrimps were marinated with a little bit of rice wine and salt. It didn't really matter what size shrimps they were as long as they were the freshest at the market that day.
2) Finely diced shallots were sauted in butter until soft and shrimps were added to the pan and cooked until just turned pink and with a little bit of brown on the edges. Remove from the pan and cut into small pieces.
3) Diced tomatoes were added to the pan (with a little bit of shallots left) followed by cooked star pasta.
4) Chicken broth was added to the pan just enough to cover the pasta, followed by frozen peas.
5) After the mixture was cooked until liquid was mostly evaporated, diced cook shrimps were added.
6) Remove from pan and sprinkled Parmesan cheese
7) Optional: A small amount of milk or cream can be added before cheese if a creamier pasta is desired.
Dinner
Pork and cabbage dumplings
Creamed cabbage and carrots
Scrambled egg with spinach
Apple and blueberries
