Thursday- February 3, 2011

Happy Chinese New Year! We celebrated the year of the Bunnies by making dumplings. Chive with eggs and rice noodle and pork and cabbage dumplings. Shown in the picture are the bite-size dumplings for the little people compared to the one normal size dumpling.

Breakfast
Oatmeal with banana and blueberries
Cantaloupe

Lunch
Star pasta with shrimp, tomato, sweet peas, shallot and Parmesan cheese
Pears

Note: The shrimp pasta was quite tasty, so we will record the recipe here for the future reference.

Fresh shrimps- shelled and deveined
Star pasta- cooked
Tomatoes- peeled, seeded and diced
Shallot- finely chopped
Frozen sweet peas
Chicken broth

1) First the shrimps were marinated with a little bit of rice wine and salt. It didn't really matter what size shrimps they were as long as they were the freshest at the market that day.
2) Finely diced shallots were sauted in butter until soft and shrimps were added to the pan and cooked until just turned pink and with a little bit of brown on the edges. Remove from the pan and cut into small pieces.
3) Diced tomatoes were added to the pan (with a little bit of shallots left) followed by cooked star pasta.
4) Chicken broth was added to the pan just enough to cover the pasta, followed by frozen peas.
5) After the mixture was cooked until liquid was mostly evaporated, diced cook shrimps were added.
6) Remove from pan and sprinkled Parmesan cheese
7) Optional: A small amount of milk or cream can be added before cheese if a creamier pasta is desired.

Dinner
Pork and cabbage dumplings
Creamed cabbage and carrots
Scrambled egg with spinach
Apple and blueberries
