Breakfast
Basic 4 Cereal with milk
Hard boiled eggs
Cantaloupe
Lunch
Fried rice with chicken, zucchini, carrots and onions
Apple yogurt
Pears
Note: The fried rice today was quite a hit and I believe it has good nutritional value. Here is how I made it:
1 pre-cooked chicken breast tenderloin, cut in small pieces
1/4 cup carrots, finely diced
1/4 cup zucchini, finely diced
1/4 cup corn kernel, fresh or canned
small amount of onion, finely diced
Organic low sodium chicken broth, about 1/2 cup
Cooked rice
Organic ketchup
Optional: other chopped veggie, egg, tofu or meat
1) Heat a small amount of vegetable oil in a pan and browned the chicken.
2) After removing the browned chicken, saute onion, carrots and zucchini in the same pan over medium heat for 1-2 minutes.
3) Add chicken broth to the pan and cook until carrots are soft, 5-8 minutes
4) Add rice and corn to the mix and cook until most liquid evaporates
5) Put chicken back to the pot and stir
6) Season lightly with ketchup
Dinner
Baked sweet potato fries
Sweet peas and corn with cheddar cheese
Cherry tomatoes
Blueberries
